In this case, NOM 1436 is the designation for the distillery that produces Fina Estampa, a tequila brand. The phrase “Home of Fina Estampa” means that NOM 1436 is the registered distillery responsible for crafting Fina Estampa tequila, signifying its origin and production quality. This traceability guarantees the authenticity and compliance of the tequila with Mexican regulations.

The harvest, or “jima,” is an art form passed down through generations. Our jimadores use a specialized tool called a coa to expertly cut away the sharp leaves of the agave, revealing the precious piña inside.
This process requires precision and expertise, as each cut influences the flavor and quality of the final product. The harvested piñas are then transported to our distillery, where the magic of transformation begins.
The journey from piña to tequila is a meticulous process that combines traditional methods with modern innovation, ensuring that each bottle of Mr. Sancho Pancho Tequila embodies the essence of its heritage while delivering unparalleled quality.
The first step in the production process is cooking the piñas to convert their complex carbohydrates into fermentable sugars. We use a combination of traditional stone/brick ovens and modern autoclaves to achieve the perfect balance of flavor and efficiency. This slow-cooking process can take up to 72 hours, allowing the agave to develop its rich, sweet profile.
Once cooked, the piñas are crushed to extract the sweet agave juice. We employ a combination of traditional tahona stone mills and modern roller mills to ensure maximum extraction while preserving the integrity of the agave fibers. This juice, known as “mosto,” is the lifeblood of our tequila.
The mosto is then transferred to stainless steel fermentation tanks, where it undergoes a natural fermentation process. We utilize a mix of wild and cultivated yeasts to enhance the complexity of flavors. The fermentation process can take several days, during which the sugars are converted into alcohol, creating a rich, aromatic liquid.
Distillation is where the artistry and science of tequila making truly shine. Our tequila is distilled twice in a combination of copper and stainless steel pot stills, refining the liquid and concentrating its flavors. This meticulous process results in a tequila that is smooth, balanced, and full of character.
For our Reposado and Añejo varieties, the tequila is aged in carefully selected oak barrels, imparting additional depth and complexity. Our Reposado is aged for a minimum of two months, while our Añejo rests for at least one year. During this time, the tequila absorbs the rich flavors of the wood, developing notes of vanilla, caramel, and spice.

Aged for 16 to 18 months in oak barrels, this tequila develops a rich amber hue and a smooth, complex flavor. Expect notes of dark chocolate, caramel, and spice, delivering a velvety, refined finish.
